Celebrated Chef Michael Mina has partnered with the luxurious St. Regis Resort, Monarch Beach to open STONEHILL TAVERN. Designed by Tony Chi, this exciting new eatery features Modern American cuisine, catering to the culture and lifestyle of the Southern California coastal region.
STONEHILL TAVERN marks Mina’s return to the Dana Point area. “It is a great pleasure to be returning to Southern California and the St.Regis. This collaboration with Tony Chi and the idea of a modern American tavern has been a passion of both of ours for some time and I am thrilled to see it come to fruition.”
True to its name, the restaurant offers elegant tavern fare in a casual yet sophisticated setting. Guests may enjoy Mina’s twist on home-style favorites like his Organic Whole Fried Chicken served with roasted vegetables and grain mustard jus one evening, and savor classic comfort dishes such as the Prime Short Rib accompanied by worchestshire jus, potato puree, and celery the next. Seafood aficionados will not be disappointed by the Salt Baked Maine Lobster, baked whole in Guérande grey salt, fennel chowder and grits or the Shellfish Stew with chorizo, a spicy saffron broth, kumquats and basil. Other dishes include a Suckling Pig with root vegetables, truffle sauce and wild arugula and the Colorado Lamb Rack complimented with garden vegetables, Sarawak pepper and nicose olives.
